I know, I don't consider it a vegetable either. Ketchup technically qualifies as well. I know, I know. When I decided to start eating a healthier diet I thought french fries were a thing of the past, an occasional treat, but I was wrong! We can have our fries and eat them too! 2 Large Russet Potatoes. 4 Tbsp Canola or Olive Oil.
