Wednesday, February 9, 2011. 3-4 10 oz. cans of red enchilada sauce. Corn tortillas, small or medium size. 1/2 head of lettuce. 1/2 bunch green onions. Brown ground beef in large saucepan. Add cans of sauce. Simmer on low. Layer corn tortillas between damp paper towels. Microwave 30 seconds, check for tenderness. Continue at 30 second intervals until done. Garnish with sour cream and salsa. Sweet and Sour Meatballs and Rice. 1 lb ground beef. 1/3 C fine dry bread crumbs. 2 Tbs minced onion. 1 C beef broth.

Tuesday, February 1, 2011. 1 Tbs olive oil. 1 Tbs balsamic vinegar. 1/2 tsp. kosher salt. 1/4 tsp. freshly ground black pepper. 1 tsp minced or pressed garlic. If roasting in the oven, heat oven to 425. If grilling, prepare grill to medium heat. Wash asparagus and then remove the bottom couple of inches of each stalk. Just snap off the woody ends. Spicy Tex Mex Salad. 1 (15 oz.) can pinto beans, rinsed and drained. 1 (15 oz.) can black beans, rinsed and drained. 1 1/2 C. shredded Cheddar and Monterey cheese blend. 1 (10 oz.) pkg chopped romaine lettuce. 3 tomatoes, chopped. 1 (16 oz.) bottle Catalina salad dressing. 1 (16 oz.) pkg corn chips. In a large bowl, combine the pinto beans, black beans, cheese, lettuce and tomatoes. Add 3/4 bottle dressing and mix well. Add corn chips before serving. Spicy Tex Mex Salad.

Monday, January 10, 2011. 1 lemon cake mix. 1 pkg lemon instant pudding mix. 1 C lemon-lime beverage, carbonated (sprite). Combine cake mix, pudding, stir in oil. Beat in eggs one at a time, stir in sprite. Pour in a greased bundt pan. Bake at 325 for 35 min. 1 C powdered sugar. 2 Tbs lemon juice. 2 oz cream cheese. Combine glaze ingredients until smooth. Pour over inverted bundt cake after it has cooled for 15 or 20 minutes. 1/4 C butter (1/2 stick). 2 to 2 1/2 Tbs. canned milk. 1/2 tsp. vanilla.

Saturday, July 23, 2011. We (Elisabeth and Sarah) have been taking swimming lessons this summer. I say "we" because Sam has become such a water-bug that he and I almost always end up partially or completely wet. I have loved their teacher and they are both loving it too. Wahoo! Here's my view today. I love the pool, it is my favorite part of the day. We miss you guys and are currently trying to think of another excuse to see you! July 23, 2011 at 3:42 PM. Thursday, September 23, 2010. So it was my birthday this month. It came and went and was actually very fun with no big incidents. I am now the BIG 3-1 which puts me in my thirties for sure. When I was 30 I was still barely out of my twenties now I'm really. Because the way you grow old is kind of like an onion or like the rings inside a tree truck or like my little wooden dolls that fit one inside the other, each year inside the next one.
