In a small bowl, mix instant yeast, lukewarm water, and sugar. Set aside for 10 minutes. (To make sure the yeast is still active). In a big bowl, add the yeast mixture with the sponge dough ingredients and knead to form dough. Cover the dough with a cling film and let if proof for 2½ hours in a warm and draft-free place.
