Borrowing many nuances from Aaron Franklin, through access to his generous videos. This is what I did in full detail. Brisket: USDA Prime, 15.22 pounds, fresh and flexible to bend. Never frozen. The color was pink, not dark. Source was Costco. I love beef. There, that is out of the way, I can now move on. 2 T Coarse salt.
