Changing the oil filter and the oil pressure sensor did the trick - I suspect it was indeed the sensor which was the problem, but in any case I can now see the engine quickly getting up to the right pressure when it is running. So basically, the car is complete and I'm fairly happy with the end result - all the bits that need to be on are on.
