We think it started sometime back around 1999 or 2000 when Damon Cortez had a bug up his butt. well to cook some butts. Now mind you, he was not exactly a stranger to good BBQ being born in Texas and raised in the Carolinas you see but he was determined to make the best dang BBQ around. Damon procured a BBQ pit and began experimenting with smoking Butts, Ribs, and what not and not before long he built himself a reputation as the BBQ guy among his friends and family.

Ahhthe meat that made North Carolina famous. We do it all kinds of ways but we think the best way is low and slow and maticulously pulled by hand. We do it chopped and what not also but to experience it the way it was meant to be eaten means pulling it by hand! Our Butts are seasoned in our homemade rubs and smoked to perfection using our pitmasters' secret BBQ techniques developed over hundreds and hundreds of smoked pork butts. Seasoned with our homemade rubs these babies will make a grown man cry.
