I recently learned I need to be on a gluten-free and dairy-free diet. I am now trying to see which of my recipes can be adapted to this new way of eating. If you check out the "Gluten-Free". Label you will find recipes that are naturally gluten free as well as recipes that *can* be gluten-free. If I have labeled it as Gluten-Free and it calls for all-purpose flour, I have discovered using the "all-purpose gluten-free" flour substitutes well (Better Batter is my favorite! Without any other changes needed.

Sweet and Spicy Chinese Chicken. One of the few blogs I follow, posted this recipe which we really enjoyed - especially since it's a crockpot recipe! Serve over rice with stir-fry veggies! 3 boneless skinless chicken breasts. 3 boneless skinless chicken thighs. 1 large bell pepper, diced. 2 cloves garlic, minced. 1 jar apricot or peach preserves. 2 Tablespoons brown mustard. 2 Tablespoons soy sauce. 1/2 teaspoon crushed red pepper flakes. I love having my freezer stocked full of meals and snacks. To just send a child (or husband) to the freezer to pick a meal, throw it in the crockpot, and be ready for the evening is just bliss to me! And kind of odd to make. (Recipe found at The Taylor House. 2 small boxes of Crispix cereal. 2 cups brown sugar. 1/2 cup Karo syrup. 1/2 teaspoon baking soda. Melt butter in a sauce pan. Add brown sugar and bring to a boil. Pour mixture over cereal and then pour into a paper grocery bag. Microwave for 2 minutes and shake. Microwave again for 2 minutes and shake. This recipe, found at BestFoodBook. Was much soup-ier than I imagined. But it was still delicious! I did adapt it a bit to tame down the spiciness.). 1 1/2 pounds chicken breasts. 16 oz jar salsa. 1 can black beans, drained and rinsed. 8 oz frozen corn. 1 Tablespoon chili powder. 2 teaspoons minced garlic. 2 cups dry rice. 8 oz shredded cheddar.
