6505 W Park Blvd Ste 322. Jim Livengoods Chicken Liver Pate. 1 lb chicken livers (all extraneous membranes removed). 1 t fresh thyme (minced). 1 t fresh ground pepper. T fresh ground nutmeg. Soak chopped basil leaves in cognac (1-2 hours). Clean Livers. Sauté Livers with shallots and 1 stick of the butter to the point where the livers are browned on the outside but slightly pink in the middle. Add stick of butter in pieces. Add cognac, basil, salt, nutmeg, and thyme and sauté 1-2 minutes. 1 cup of raisins.
