Experiencing the journey God has long before planned for me.while attempting to joyfully smile all the way! Thursday, April 14, 2011. My Mom in Mexico! She walked on the cobble stone streets. In Toluca she visited the Botanical Gardens, Cathedrals, ate Local Chili-Mango Ice Chilaquiles, Pozole, and Fresas Con Crema. She visited Parque Viveros for a walk (the place I run). Parque Viveros is also a tree nursery. She ate a Bellini, the "spinning" sky restaurant. She ate in a rooftop cafe overlooking downtown.

Peter, two other RUF students, and I spent about six hours putting up flyers advertising for English Club and RUF activities. All I can say right now is.I am tired and what a BIG campus! For our CURICLUB activity last Friday we went to one of our English Club member's house and to eat! His parents invite the group each year and they cook us yummy Pozole. Pozole is a traditional Mexican dish that is in my Top 3 of the foods that I have tried here. I could eat Pozole all day long! The whole group eating! 2 1/2 pounds skinless, boneless chicken breast halves.

A group of Japanese students that study Spanish at the UNAM (some from our English Club) held a benefit activity to raise money for Japan. Alitzel and I went. We got bookmarks with our names written in Japanese! We grilled carne asada, chorizo (type of sauage), costillas (ribs), salchicha (sauage), hamburgers, onions, and nopales (cactus) . Of eleven from RUF and English Club hiked up El Ajusco. It was super windy and rather steep.with a GREAT view of the Mexico City down below! We packed lunches and ate at the summit. We had our RUF Spring Retreat in Guanajuato, Mexico (about 5 hours from Mexico City). Guanajuato is a smaller city know for its relaxed atmosphere, Spanish style architecture (it was founded by the Spanish), and its romantic setting. Tuesday, July 26, 2011. This is a photo of the creek / river where we spent a few hours today. And, of course, there is a story behind it! Andrew, Ty, Amy, Allie, Brady and Conner. Thanks to Nana and Daddy Jim for going with us. As you can see, we had the cousins and the grandparents for memory making!
