Just another WordPress.com site. In Search of Onion Soup. Next up is one of my all time favorite soups–Onion Soup! The soup base is beef broth and we did that with beef bones in the oven for 45 minutes, and then simmered for 3 hours. We carmelized a lot of onions, I believe 3-5 pounds, you need a lot to get a little, and then a baguette and some Gruyere cheese on top. We put the bread slices in and topped with the cheese at the last moment and Voila! Onion Soup- The Greatest? Meatballs are Just Good Fun.

I doubt it but it is good piece of meat that melts in your mouth that almost tastes like liver? Its a nice change of pace from the more reasonable priced pho’s at other Vietnamese restaurants.
