I highly recommend this book, it's chocked FULL of good, diverse soup recipes. Thanks Anna Thomas! 12 oz yellow potatoes. 1 tsp sea salt, plus more to taste. 3 bunches fresh parsley. 3 leeks, white part. 2 TBS olive oil.
