My Month of Meals. Wednesday, April 13, 2011. March 27th - April 2nd. Pot Roast. Rolls. (Peanut Butter Brownies. Vanilla Ice Cream.). Adapted from Butterwood Desserts, West Falls, New York via Gourmet, October 2007 (to me via Smitten Kitchen.). 2 sticks (1/2 pound) unsalted butter, softened. 1 3/4 cups sugar. 1 cup creamy peanut butter. 2 large eggs plus 1 large yolk. 2 teaspoons pure vanilla extract. 2 cups all-purpose flour. 1 1/2 cups semisweet chocolate chips (9 ounces)*. 1/2 teaspoon salt, see note*.

I looked everywhere for this recipe this week to make for my book club (Hotel on the Corner of Bitter and Sweet) even though I think it's more of a Thai recipe than Chinese or Japanese. I didn't find the recipe and considered making moon cakes instead but had no idea where to get lotus seed paste for the filling and thought you probably needed a mold . so served unimaginative marble cheesecake and fortune cookies instead. My Month of Meals. Saturday, March 20, 2010. This is my new favorite yogurt. I love yogurt. I eat it more than once a day. I insist my family eat it once a day (Rick and my two older girls aren't huge fans - but my little guys love yogurt.). I mostly eat Greek yogurt, because it's more like the Australian stuff I grew up on - thicker with much less sugar and a "kick" that gets you in the back of your tongue. My Month of Meals. Monday, January 10, 2011. Pear and Gorgonzola Salad. This is my new favorite salad. I happened upon it when I was bouncing around blogs looking for ideas for a primary lesson I was working on. Yummy! It is SUPER delicious. I made it for dinner this week - then had it for lunch the next 2 days - then went to Trader Joes to get more salad greens and pears (there was still dressing left and I didn't want it to go to waste.) Seriously, I could eat this for dinner every night.
