In August, my mom surprised me for my birthday with private sewing lessons to make the project of my choice. After much deliberation, I finally decided on a rag quilt. Quilting is huge and scary and intimidating and this seemed like a good intro quilt. Plus, it’s so cozy and warm (did I mention it’s all flannel? I absolutely love it!

It’s a touch difficult to find recipes for granola bars that are without tree nuts or aren’t loaded with sugar/calories. I discovered a recipe with minimal ingredients that was quick and mostly wholesome. I may add peanuts, dried fruit, pumpkin seeds, and/or the kitchen sink to the next batch to zing things up. 1/2 cup (1 stick) unsalted butter, cut into 8 pieces (I used Earth Balance vegan butter).

The tempeh is tossed with garlic, shallot and tamari and briefly sautéed in olive oil for optimum flavor before combining with jasmine rice. Serve with sautéed spinach or broccoli for added color and flavor. 2 (8-ounce) packages tempeh, any flavor (I only used 1-8oz pkg. of Westsoy 5 grain). Preheat oven to 400 F.
