Perfectly Chewy Ginger Snaps. Nov 25, 2014. I think these may be the best cookies I’ve ever made! Of course, I LOVE ginger cookies, and these are perfectly crisp on the outside and chewy on the inside! 2 c bread flour (you can use all-purpose flour if you don’t have bread flour). 1 tsp ground ginger. 1 tsp baking soda. 1/2 c butter, softened. 1/2 c granulated sugar. 1/2 c dark brown sugar, packed. 1/4 c coarse sugar, for rolling. A friend gave me this recipe years ago and it’s my go-to recipe for gatherings and chili nights! 2 boxes Jiffy cornbread mix. 1 can creamed corn. 8 oz light sour cream. 2 cups shredded cheddar cheese. 1 small yellow onion, chopped. Preheat oven to 400. In a large bowl mix both boxes of jiffy mix with 2 eggs and 1/2 cup milk and the can of creamed corn. Sauté chopped onions in butter until translucent, about 10 minutes. This recipe is extremely easy, and produces biscotti that the perfect accompaniment. To a cup of coffee.
