Butternut Squash and Miso Salad. Butternut squash peeled, chopped. Rocket or leaves of your choice. A handful of lightly toasted pinenuts. 2 Teaspoons of Miso paste. 4 Tablespoons of melted coconut oil. 3 Teaspoons of fresh lemon juice. 1 Clove of garlic finely chopped. A little tinned coconut milk optional. Roast the butternut squash in some olive oil with a sprinkle of salt. Arrange the rocket or leaves on your serving dish. Top with the pinenuts and serve straight away. Can't wait for more?

1 Red onion finely chopped. 3 Large carrots chopped into small pieces about 1/2 cm sq. 3 Celery sticks chopped into small pieces about 1/2 cm sq. 1 Large courgette chopped into small pieces about 1/2 cm sq. 1 Garlic clove finely chopped. 1Large potato with the skin left on chopped into roughly 1 cm pieces. 4 Tablespoons tomato puree. 2 Litres vegetable stock. 300g Small cherry tomatoes. 400g Tin chickpeas drained and rinsed. 1/2 Savoury cabbage shredded. 2 Tablespoons balsamic vinegar.

Raw chocolate is full of wonderful antioxidents which are good for us.Theres no added sugar in these delightful pots of rich chocolatey gooeyness, the sweetness comes from some juicy dates. They are completely glutenfree, dairyfree and eggfree so perfect for vegans. they highlight just how good plantbased food can taste. 1/4 Cup of soaked cashews (ideally overnight).

Falafel, as with most of my recipes are incredibly easy to make and you'll probably think afterwards.why did I ever buy these readymade! Don't stop at just making Falafel balls out the mix, shape them into veggie sausages and burgers too. They freeze fabulously. Tip, if you've had your spices a while buy some new ones as they do lose their lovely flavour over time. 2 x 400g tins of cooked chickpeas rinsed and drained. 1 to 2 tablespoons of olive oil. 1 small onion roughly chopped. Creamy Soulfood Dal

300g Yellow split peas. 1 Litre vegetable stock. 1 Teaspoon of cumin seeds. 1 teaspoon of coriander seeds. 1 Teaspoon mustard seeds. 1 garlic clove finely chopped. 1 Small red onion finely chopped. 1 Tablespoon coconut oil. 100g Tomatoes roughly chopped. 1/2 Cup tinned thick coconut milk. Himalayan rock salt and freshly ground black pepper to taste. Thinly sliced spring onions. 1 Thumb sized piece of fresh ginger grated. Serve in bowls with the spring onions and coriander leaves sprinkled ontop.

Not only do these Raw Chocolate Tarts taste amazing they look amazing and incredibly easy to make. They will look impressive served up to your friends, like you've been slaving over a hot stove all afternoon.if only they knew ;). 1 Cup of blanched almonds. 1/2 Cup of pitted dates. 1/2 cup Unflavoured melted coconut oil. 1/2 Cup raw cacao powder.
