Monday, May 6, 2013. My mom threw me a lovely and intimate baby shower, of which began with brunch at North Harbor Club on the lake and concluded at my house for drinks, dessert, games and gifts. 7 very important ladies came in from out of state (CA, PA, DC, MO and SC) to partake in the festivities and mingle with me and my best NC girls. I've had a bag of Betty Crocker brownie mix sitting in my pantry for 6 months, and after having it stare at me every time I open my pantry door, I finally caved in and baked them. I baked the healthier version by mixing the brownie mix with a can of Diet Coke. You can do away with the high calorie eggs and vegetable oil that the recipe on the box requires. While I do believe that is important, I think the most important element is the quality of the grits. I grew up eating the "just add water" instant grits, and always loved them.
