HEAT THE RASPBERRY PUREE WITH THE SUGAR. WHEN IT COMES TO A SLIGHT BOIL, REMOVE FROM HEAT. IN THE MEANTIME, SOFTEN THE GELATIN IN ICE WATER FOR ABOUT 3 MINUTES. ADD THE BLOOMED GELATIN TO THE PUREE.
