Dylan's Mom's Blog. I’m constantly buying rotisserie chicken from the market. The reason is it’s a fast and easy solution when I’m completely out of ideas for dinner. One recipe I use (it’s seriously the best tasting chicken noodle soup in America) is Giada’s Lemon Chicken Soup. There is something about adding lemon to chicken noodle soup that makes it absolutely addicting. In any event, today I decided to make this cheesy chicken and wild rice casserole. Dylan's Mom's Blog. I have to admit this week’s dinners have consisted of ‘quick and easy’. A lot of leftovers; a lot of grilled cheese with tomato and avocado. Two nights ago, though, I was inspired by an eggplant parmesan recipe that I’ve been using for a few years. It’s essentially eggplant parm without the frying. Dylan's Mom's Blog. Tonight was the kind of dinner that we are accustomed to. Walked in the door, nothing to eat. Everything is in the freezer; nothing was thought out or thawed out in advance. Dylan is starving. She is sitting in high chair eating hummus on crackers. At about 8:45 I realized I didn’t want tomorrow night’s dinner to pan out the same way as tonight’s so I spent about 30 minutes making Martha Stewart’s brown rice chickpea burgers.
