A special pan, like a flat pancake pan, is usually used to cook the enjera, although a frying pan can be used. After cooking, it is rolled up and folded over to eat with other dishes, e.g. vegetables, lentils, and meat. 2 cups of rice flour (in Ethiopia the grain 'Tef' is used'. 1 cup of plain or self-raising flour (if making for the first time). Add enough water to make a thin dough. Leave for 1-3 days - depending on the weather. In summer, 1 day may be enough. Throw away water, and add fresh cold water.

Hark besbao: lentils, garlic and coriander, with fried onions. About 8-10 cloves of garlic. A large bunch of coriander leaves. Cook the lentils in a large pot with plenty of water. Put 1 or 2 tbsp flour in a bowl, and mix with water. When the lentils are cooked, add the floury mixture and stir until boiling. Add about a cup of olive oil to the lentils. Chop the coriander, and add about half to the pot. Add cumin to taste. Add salt and pepper to taste. Squeeze the juice from the 2 lemons.
