Cheap, Fast, and Tasty!

In my Last Entry. After a few more days of "aging" on the countertop it got spicier and spicier. Delicious! It is crisp, refreshing, and flavorful. Plain sauerkraut tastes decidedly different from the cortido. I can't explain this very well except to say that plain sauerkraut is yet more cool and definitely more sour. The cortido, to me, tasted lighter, a bit more mild, and more flavorful. Cortido a.k.a. Mexican Saurkraut. Right here in Brackettville! 1 cup carrots, grated. 4 cloves garlic, minced. Mix u...

Cheap, Fast, and Tasty!: Mom's Enchilada Casserole

http://texascook.blogspot.com/2008/07/moms-enchilada-casserole.html

No, this recipe does NOT require that you make your own corn tortillas. Normally, I would just use store bought corn tortillas for enchilada casserole- but, like I said, I needed the practice. And since I'm no Tortilla Wizard, I won't drag you through the written instructions on how I make them until I get it perfect. Following are just some photos of the process- there are a multitude of recipes and suggestions online. If I don't knead them for a few minutes, they simply don't cook up as well. Once cook...

Cheap, Fast, and Tasty!: Windshield Chicken

http://texascook.blogspot.com/2008/06/windshield-chicken.html

Solar Cookers in Rwanda- saving and changing lives in ways you'd never imagine. I apologize for the following crap photos. I taped my camera together long enough to shoot this, but it fought me all day so I was trying to just shoot as fast as I could in between total breakdowns and freezes. Soon my little digital will be off to the repair shop. Please wish it a good journey! Using the Windshield Solar Cooker. I have made Chilaquiles. Yes, I know, I already blogged Bryzanne's Chilaquiles. I made my solar ...

Cheap, Fast, and Tasty!: Cortido a.k.a. Mexican Saurkraut. Right here in Brackettville!

http://texascook.blogspot.com/2009/03/cortido-aka-mexican-saurkraut-right.html

Cortido a.k.a. Mexican Saurkraut. Right here in Brackettville! I adapted this recipe, making very very few changes, from AskShelley.com. There's nary a place in the world where people don't ferment cabbage in one way or another. In Germany, fermented cabbage is called saurkraut. In Korea, it's called kimchi. In Mexico, cortido. 1 large cabbage, cored and shredded (you can use red, green, or both). 1 cup carrots, grated. 2 medium onions, quartered lengthwise and very finely sliced (red, white, or yellow).

Cheap, Fast, and Tasty!: New Years Dinner

http://texascook.blogspot.com/2009/01/new-years-dinner.html

Nope, not gonna tell you how to fry a turkey. I've never done it myself and so I am hardly qualified to offer the best tips and techniques on the actual frying- but I have a lot of opinions on the preparation since that's always my job when we fry a turkey. Some opinions on preparing to fry a turkey from a fried turkey fan. 3 Fry two birds. Why not? 5 The oil is expensive (we used four gallons of cottonseed oil to fry our two turkeys tonight- about $30 worth) but you can cut down on the amount of oil you...

Cheap, Fast, and Tasty!: Pico de Gallo

http://texascook.blogspot.com/2008/08/pico-de-gallo.html

Feel free to coarsely chop all ingredients and throw it in the food processor. Just don't over process. Mincing or pureeing Pico ruins it. 1 1/2 cups diced onion (red, white, or yellow). 1 1/2 cups diced tomato. 1 to 5 serrano or jalapeno peppers (depending on taste) finely diced or thinly sliced- remove the seeds if you want to decrease the heat a bit. Minced cilantro to taste. Juice from 1 lime. Serve on tacos, burgers, beans, burritos, grilled chicken breast, anything you like! Yes, I could use my lit...

One Texas Woman's Adventures in Cooking. Lightened Up Chicken Salad Sandwich. July 7, 2014. June 18, 2014. I like the idea behind chicken salad sandwiches, but often what comes out is a gritty, grainy, goopy mess of mayo and chicken bits. Ew. So when I came across the recipe for a Greek Yogurt Chicken Salad Sandwich. I was hooked. Of course I made my own version. I added the chicken and yogurt mix to the fruit and stirred well. Everyone actually ate the meal, so it was a hit in my books! 1/4 cup sliced a...
