Texas food done my way. My take on our local cuisine, along with some personal favorites. Tuesday, October 11, 2011. Be sure to get your oil temperature up to 375(F) before frying. 3 cups all purpose flour. 1 tsp baking powder. 8 oz canned or fresh pureed pumpkin(butternut squash or sweet potatoes can be substituted). 1/2 cup lard, shortening or margarine - melted (I use shortening). Vegetable oil for frying. 2 tbsp granulated sugar. 1 tbsp ground cinnamon. 1/4 tsp ground clove. 1/4 tsp ground ginger.

Texas food done my way. My take on our local cuisine, along with some personal favorites. Monday, August 30, 2010. Hickory Smoked Pepper Crusted Tri-Tip. It takes patience to use a smoker. You can't get in a hurry with it or let the. Tri-tip, or Triangle Roast, comes from the bottom of the sirloin. It is a very tender piece of meat with a low fat content. You really need to watch the internal temperature when you smoke a Tri-tip roast or it will dry out and get tough on you. 1/2 cup course ground pepper.
