Saturday, October 30, 2010. We had our semi-annual trek back home to Utah this summer. It was again a LONG drive {thankfully we didn't get stuck in a snow storm}. But we did get to see some freaky stuff on the way to Utah. And yes.it's from Kansas [oh Kansas, how I will NOT miss you]. We stopped to visit the Nieto's! It It is a simple, creamy, smooth soup that even your kids will like and it's a great way to sneak in a few veggies! 1 head cauliflower, chopped. 2 large potatoes, chopped. 8 carrots, peeled and chopped. 2 zucchini, chopped. 1 quart chicken broth. 8 oz cream cheese.
