This is really good and really easy. 4 boneless, skinless chicken breasts. 1 can diced tomatoes, undrained. 2 cloves garlic, minced. 1 pkg Stove Top Stuffing Mix for Chicken. 1/2 cup of water. 1 tsp dried basil. 1 cup shredded mozzarella cheese. Cut chicken into 2 inches pieces. Place in baking pan and sprinkle with salt and pepper, basil and cheese. Top with stuffing mixture. March 3, 2011 by CleanLaundry.
