Morris Improved Heading Collards:. A green eaters green. Strong delicious mustard taste. The original mustard green. 60 days. Slightly milder than the curly. Easy to clean. 60 days. Very cold hardy. Pete’s Perfect Collards | The Collard Seed

To a large pot add water, fresh cut Morris collards, and pork seasoning of your choice. Boil until slightly tender. Drain and add collards to large black skillet with some canola oil. Heat, stir, and chop when at desired tenderness. Salt and pepper to taste. Any pork meat will workwe use pork bouillon. Locals fry fat back and cook in the grease and enjoy the crisp strips along with their collards. Invest in a good chopper. Homemade relish adds much to the taste. Everything is better with vinegar.

How We Got To Here! Lawrence Morris still grows the collard variety that his father and grandfather developed. It all started in the early 1900’s when Elisha Morris and his wife Polly knew there had to be better growing conditions than the sandy soils of the sandhills in North Carolina. They loaded up and moved east. Along the way Fairly’s son Lawrence joined the operation and grew it into the areas premier wholesale and retail garden seed and plant store in the area. Shirley’s Collard and Blackeye Pea Soup. 2-3 cups of cooked collards, chopped. 3 cups of blackeye peas or 3 cans (rinsed and drained). 2 cans of French Onion soup (Progresso). 2 small cans of diced tomatoes with mild jalapenos. Cup of minced garlic. Salt and pepper to taste. Dash of olive oil. If you like it spicier, sprinkle Cajun seasoning on top after serving and shredded sharp cheddar cheese.
