Happenings at the covs. Monday, February 23, 2009. An attempt at rest. I had just finished making supper, and decided to lay down for a few minutes. It was about 3:30, and I didn't expect Shannon or Jack to wake up until after 4. I didn't really want to sleep, just doze. :). Me: "I'm resting. You'll have to wait until I get up.". Shannon contented himself with looking out the window for awhile, and then observed, "There are lots of cars and trucks moving, mama.". Me, in a semi-dozed state, "mmhmm.".

Happenings at the covs. Wednesday, September 3, 2008. I watched these again a few times today. I laugh harder each time. Anyway, in case you haven't seen them or would like to watch again, here they are:. Shannon translation: "Pee in potty. Not in pants."). For the record, Shannon no longer has any potty training issues, and hasn't for close to a year. It's wonderful! I can't wait until Jack is trained! Also, congrats on the purchase of your new house! Wednesday, September 30, 2009. Hiking in the Smokies. Monday was a gorgeous day with lots of sunshine so we decided to do a little hiking in the Smokies. One of the great things about the Smoky Mountain National Park is that the entrance is free! For our first hike we chose a trail that ran right next to a river the whole way. It was beautiful! Friday, September 18, 2009. I recently got a book. From the library with different ice cream, sorbet and granita. Recipes. I wrote a few down that I wanted to try and this week we made the combination below. They are two different recipes but after they were both made, I layered them in a container so that when they were scooped they were swirled. The combo was delicious! Toasted Coconut Ice Cream. 1 c dried, shredded coconut, preferably unsweetened (I used regular since I didn't have any unsweetened).
