Saturday, January 21, 2012. A little reminder to myself for next holiday season. Just a gentle reminder. I was only 15 pounds from goal at the beginning of October. After running a half marathon coming off of injury, Halloween celebrations, becoming injured again and the subsequent 2011 Holiday season, I gained 10 pounds. Tuesday, May 8, 2012. My sister in law, Erin introduced this recipe to our family. It is soooooo good with ham! 6 slices of bread, cubed. 20 oz can of crushed pineapple in juice. 1/2 c of butter, softened. Preheat oven to 350°. Beat butter and sugar until smooth. Add eggs and beat until combined. Add pineapple (juice and all! Bake uncovered at 350° for about 50 minutes to 1 hour, or until cooked through and lightly brown on top. Thursday, November 17, 2011.
