Harvest Dinner — Big Tree Hospitality
http://www.bigtreehospitality.com/harvest-dinner
EVERY YEAR WE INVITE OUR FRIENDS, FAMILY, FARMERS, BREWERS, FISHERMEN AND VENDORS TO COME TOGETHER AND CELEBRATE WITH ALL OF US. We make a lot of food, pour gallons of wine, mix big bowls of punch, serve rivers of beer and we celebrate with them. Without all of these people, our restaurants would not exist. We’re excited to have the opportunity to host them for an epic dinner- it’s a wonderful time to celebrate our little community. Hospitality is everything to us. It's especially fun because so many of ...

Flanagan's Table — Big Tree Hospitality

Alex and her team attend to the smallest of details leaving us, the visitors to play. And play we did. At this particular dinner, which took place on an incredible summer night, we got playful with a pig. In Mike’s words on that nigh. We then took red snapper hotdogs and we laid those in there as well. So there is an interior garnish of those.very Maine chic. Big Treet Hospitality, 85 Middle St, Portland, ME, 04101, United States.

KEY PARTNERS and PURVEYORS. Ian Jerolmack and his crew grow organic produce for our restaurants and others in the Portland area. We love Stonecipher because Ian is always willing to try new crops and different seed varietals. Also, his fava beans are to die for. Mary Ellen and Austin Chadd have been a part of our restaurants' menus since the get-go. We love their selection of fresh early-season herbs, and their summer tomatoes and melons cannot be beat. The Browne Trading team provides us with some of th...

Outstanding in the Field — Big Tree Hospitality
http://www.bigtreehospitality.com/outstanding-in-the-field
Everybody in Maine has it going on: bearded/gruff/burley fishermen, J Crew catalogue-esque women in practical hats and quaint espadrilles, children who’ve tasted more fantastically fresh seafood than most grown adults in other regions of the country. Jim Denevan, Founder of Outstanding in the Field. The dinner begins with mingling in the field, drinking beer brewed by our friends at Allagash Brewing, and it comes together at a long, family-style serving centered on a never-ending table set for 150. As th...

Ramping — Big Tree Hospitality
http://www.bigtreehospitality.com/ramping
Similar to our smelting trip earlier in the year, this trip was equal parts about foraging and adventurous celebration. A ramp is essentially a wild leek and there are spots throughout New England where they are especially plentiful. We took a crew overnight to the Berkshires, where we foraged, camped, imbibed and roasted. THE FIELDS ARE BOUNTIFUL AND GREEN, AND MORE THAN A DOZEN OF US, EQUIPPED WITH KNIVES AND BAGS, FORAGED WHAT WE COULD UNTIL THE SUN WENT DOWN. Of course, we do work with foragers and f...
