This soup is perfect for a blustery day – a simple, easy soup that makes the house smell amazing while it is cooking. We usually use white mushrooms but adding a mix of different mushrooms adds to the depth and complexity of the recipe. 1/2 c pearl barley. 8 c low sodium beef stock or water. 1/2 to 1 tsp. salt. 2 TBSP low-sodium soy sauce. 3-4 TBSP sherry (we ended up using red wine instead).
