TASTING: Hint of nutmeg in the nose. Nothing bad. Tastes good, light tannins. Round. Not picking up anything specific yet. Cab Pioneer: 3.45 pH. Added NO OAK? Monday, November 17, 2014. Cab 2013 so2 Testing and 2014 MALO check. We tested all 2014 wines for Malo completion and found 70 (g/L? We re-tested 2013 Cab for pH and got 3.97. That's what you get for 27.75 brix and no acid addition! We tested 2013 Cab for so2 and got an average of 25 ppm. We added enough so2 to bring wine to about 60 ppm (.5 molecular for 3.98 pH). Free (French): pronounced oak, somewhat round front but heavy tannic finish. Very astringent. Posted by The Family.

Monday, March 17, 2014. Cab 2013 Malo Completion, Taste, Test, Add Sulfites AND Cab 2012 Taste, Test, Add Sulfites. Cab: 2012 had 8 ppm. Cab 2013 assumed to be 5 ppm after malo. Malo test for Cab 2013 showed approximately 50 ppm malic acid. We waited a few more days before adding SO2 (see below). Cab 2012: minimal nose, a tart fruit taste if anything. Slightly unpleasant, metallic aftertaste. Nothing that stood out as extremely bad. Actions: SO2 added 3-21-14 (a few days after this post).
