Jicama Corn Apple Salad. 1 large jicama (about 1 1/2 pounds), peeled, julienned. 1/2 fuji apple, julienned. 1 can corn, rinsed, drained. 1/2 jalapeno, diced. 1/2 cup chopped red onion. 1/2 cup chopped fresh cilantro. Juice from 2 limes. Juice from 1/2 an orange. 2 tbsp cider vinegar. Toss together the jicama, apple, corn, jalapeno, red onion, avocado, and cilantro in a large serving bowl. Pour lime and orange juice and over all. Season generously with salt. Bacon Mac and Cheese.

Super helpful! You can add some extra flavor and color to this dish by stirring about 3 tablespoons of chopped fresh parsley, cilantro, or scallions into the couscous just before serving. Hands-on time: 25 minutes. Total time: 25 minutes. 1 10-ounce box couscous. 1 tablespoon olive oil. 1/2 teaspoon kosher salt.
