After making Kousa Mahshi. I had exactly enough zucchini stuffing to make one loaf of zucchini bread while I waited impatiently for the kousa to cook. This loaf came out dense, moist and flavourful – a guilt-free indulgence! The scooped out zucchini flesh before entering the food processor. Preheat oven to 350 F. 1/4 cup brown sugar, packed (light or dark). 1 cup zucchini, pureed in food processor. 1 teaspoon vanilla extract. 15 cups flour, all purpose. 15 teaspoon cinnamon, ground. Kousa Ma7shi : Stuffed Zucchini. Zucchini and manakra (tool for hollowing) can also use a small knife/spoon or vegetable peeler. Anyways, the one big thing I want to stress before starting is this : do not throw out the scooped out pulp from inside the zucchinis. Save it because there is so much you can do with this and wasting it just feels awful.
