The Mind of Jon. I created the heaviest, most wonderful quesadillas today for dinner. Here’s the recipe (I made it myself):. Cheese (the more the better). Green Chilies and Tomatoes. Chicken spread (recipe below). Fresh tortillas (recipe here. Mix black beans and green chilies and tomatoes. Heat in microwave for about a minute. Take tortilla and spread items in this order: cheese, rice, chicken spread, salsa, Bean/chili/tomato mixture, cheese. Place tortilla on top. Cook on griddle until cheese melts.
