Rack of Lamb Provencal with Rosemary au Jus. 2 racks of lamb, frenched and cleaned of excess fat. 1oz olive or veg oil. 1 cup of beef stock, or demi glace. 1 sprig of fresh rosemary (or 1 tsp dried). 2 ounces red wine. 1 tsp chopped garlic. Cornstarch mixture for thickening (if using stock). To make sauce, combine all ingredients and bring to a full boil. Thicken slightly with cornstarch mixture. Reduce heat and simmer for ten minutes. Cut each rack of lamb into four chops and fan on a plate.
