Saturday, 1 March 2008. Here we go - stage one of the process of making Heston Blumenthal's perfect. First thing I had to do was order chili peppers and powders from America. All in all it takes 10 different spices to achieve perfection (apparently):. Somalian extra-hot chilli powder. Durango ground chilli powder. El Rey ground chilli powder. Madera ground chilli powder. Pecos Red ground chilli powder. Rio Tejas ground chilli powder. Now all I need is a jar large enough to put it all in.
