Sunday, December 19, 2010. This is the "Ramp-Chego", the first aged cheese to come out of this West-by-God HOtel. Saturday, December 18, 2010. Rampchego. 6 week cows milk, manchego style. Ramp ash covered. local WV ramps. This cheese came out excellent. Nice dry texture with a creamy finish. It has the stylistic manchego mild bite. Formed out of a desire to produce a product of the highest quality and unapologetic to the true flavors of the ingredients. The Pig Cave's Black Mustard is bold, spicy, and intense. While convention would say that the mustard would mask the subtle flavor of salumi, it actually intertwines with it and speaks to a time when raw cured pig ("raw" salumi) was good, and if you had a little wine to go with, heaven was touchable. Friday, December 3, 2010. A door in the floor. Well, it just so happens that there was a door in the floor of the closet. Ah. interesting. The door was heavy, had two locks on the top, and makes quite a thud when closed. This is the top of the stairs. The pins hanging down are supposed to lock the hing mechanism to keep the door from slamming shut.
