Corned Beef and Cabbage Dinner. 3-5 lbs Corned Beef Brisket w/spice packet. 10 small red potatoes, cut in half. 5 large carrots peeled and sliced into 1 inch pieces. 1 large head cabbage, cut into 8 wedges. Few dashes of coarse ground pepper. Place brisket in large pot, cover with water and add spices. Bring to boil, turn to low heat and simmer for 3 hours. Add potatoes and carrots, cook till tender.
