Monday, October 19, 2009. Keep in mind that some of the ingredients are not easily found in the US but I have substituted some ingredients for easy preparation. The basic recipe for "sofrito" goes as follows:. 3 large green bell peppers (If you can find them substitute for small sweet peppers or "ají dulce"). 2 medium red bell peppers. 40 - 60 stems of cilantrillo (corriander leaves or cilantro will do). 20 - 30 stems of recao (spiny corriander leaves). 4 heads of garlic. 1 tbsp of salt.
