I just love duck…it’s as simple as that. Paired with an excellent bottle of 1993 Echezeaux, a very big bourdeaux that was excellent with the rich, fatty duck. Sunday, June 17, 2012. Dr Butler, a guest chef, came to class to teach the buttas how to make homemade flat bread and pasta. It was such a fun class and everything we had was delicious. These recipes are definitely keepers. 1/4 cup warm water. 1 Tbs plus 2 tsp yeast. 1 large egg, beaten. 1/2-2/3 cup water at room temperature. 3 1/4 cups all purpose flour. 2 tsp Kosher salt or 1 tsp fine sea salt. 1 Tbs plus 1 tsp sugar. 1/4 cup clarified butter (Ghee) at room temperature. Monday, September 27, 2010. The night of the Lou Anna's Creole Chicken. The ladies prepared spagetti squash. Squash was another one of those veggies that our young buttas tried and then loved! To make this dish, first cut the squash in half and then scrape out all the seeds. Once the seeds have been removed. Place it in the oven rind side up at 375 degrees for about 45 minutes. Monday, July 26, 2010. Apricot Jelly and Goat Cheese. I still need to get the recipe for our pie crust we used in the tomato tart. Recipe from last week! We made ours from scratch but a store bought one will work just the same! On the menu for tomorrow's class is Zucchini pancakes with a basil chive cream, along with roasted chicken breasts. Monday, April 30, 2012. 1 tsp cayenne pepper. 1 tsp dried sweet basil leaves. 1/2 tsp dried thyme leaves. 1/4 cup of each of the following: chopped onions, celery, and green bell peppers (this is called the trinity in Creole cooking). 7 tbs vegetable oil. 3/4 cup all-purpose flour. 1/2 cup clam juice 1/2 cup water or chicken broth. 2 lbs peeled crawfish tails or medium shrimp. 1 cup very finely chopped green onions. 4 cups hot basic cooked rice. Wednesday, October 13, 2010. We decided to make the spaghetti squash. Again along with Ina's Meat Ball Recipe. You can find the recipe at the link above. We made some changes to her recipe but you can do it her way or the butta. Veal is on the pricier. Side so we used 1 1/2 pounds of beef and a 1/2 of pork. Here are some pictures! Aka the Queen of Kitchen Gadgets, had a meatball scoop. Scooping with your hands is just dandy but this helped all of our meatballs to be the same size! A Butta Way to Cook.

Mostly around here you see fried okra, I mean what doesn't the south fry, but plain and green is a different story.
