My little slice of life. Wednesday, January 4, 2012. So turns out with a little knowledge and some keen planning ahead, being vegan ain't so hard :P. I have brought homemade lunches to work and even received compliments on the food. I've made a vegan Alfredo sauce that wasn't any more time consuming than a regular one. I made sandwich spread, salad dressing and spice mix! I'm even enjoying eating breakfast again! I can live without the chocolate, sour cream, yogurt, eggs, gummy candy etc. but CHEESE!

My little slice of life. Saturday, January 21, 2012. Just a quick update. This challenge has not been without missteps, as it seems the food and restaurant industry goes to great lengths to hide animal products in food, BUT that's beside the point. I feel like I succeeded in something I have always felt was "too difficult". I found extra energy, I found I now sleep better. Cutting out a lot of refined sugar has rid me of my constant nightmares. In other news, I got promoted at work! Ill beat them up.

My little slice of life. Sunday, January 22, 2012. Finally took down the Christmas decorations today. The house feels less cluttered but oddly empty - even though it's no different than it was pre-holiday. I'm waiting now for the popcorn to pop andfor Kurt to get back from the store with beverages so we can watch Jericho before bed. My little slice of life. Sunday, April 29, 2012. Sleep no sleep no sleep. It has been a long time since I worked a 37.5 hour work week. It's been a long time since I have slept a solid 8 hours, or even a restful 6. It has been a very long time since I have been able to sleep in past 7:30. I don't know how to fix it without taking sleeping pills and maybe a vacation. I am only writing this out because I am trying to focus on something other than the television or falling asleep way too early.
