A food diary . Lemon Zucchini Tea Bread. Who can go wrong with a sweetly glazed loaf of yellow tea bread that has lovely green speckles and a perfect lemony zing? I mean really . how sublime. This is not your typical heavier spiced, raisin and nut laden version of years past. This quick bread has a dense crumb like a pound cake and so much bright lemon tang that it's wonderfully summer-like. Mmmm . Grab this recipe and go after the zucchini that's accumulating on your counter top! Oven: 350 degrees F.

That is the beauty of making it yourself, you can make it your way! 1/4 cup whole-grain mustard. 1/2 cup cider vinegar. 2 to 4 small cloves garlic (your preference, I like 4). A few grinds of black pepper. 1 cup olive oil or a mix of oil (I use half olive/half peanut). You just made your own salad dressing. Good job!
