The Sunday Egg Project. Eggs – A different way every Sunday. Bacon, Egg and Cheese Sandwich. June 29, 2014. Last week I let you into my life a bit and talked about how I had to leave my home most weekends. Well the good news is that has all changed! My kids loved that meal. I put my own spin on it. I decided we would make a deconstructed grilled cheese sandwich, top it with bacon and then crack the egg inside. T, my cheese grating expert. E is working hard to grate by himself. I refuse to give up my love of running, my stress reliever, and my “me” time due to a diagnosis. I used to hate running. That’s right – I hated running. I was not always a runner and I was never athletic (besides gymnastics which I quit when I was 14). I started running as a way to lose weight for my wedding. Vanity is a great motivator!
