In Northern Virginia, peaches are in season between late July and late August, and you can typically find a few types at the farm: white, yellow, and donut — white fleshed and very low in acid. While I don’t blame the recipe, I learned through the baking process that the recipe was really geared towards people buying semi-ripe, semi-flavorful peaches from the supermarket…not picking them off the vine.
