Zaletti: Cornmeal biscotti from the Valetto. On 17 Nov, 2014. 3/4 cup dried currants. 1 cup (or so) rum. 1/2 lb unsalted butter, softened. 1 tbsp baking powder. 1 tsp kosher salt. 2-1/4 cup all purpose flour. Turn the dough out onto a lightly floured work surface and divide into thirds. Roll each one into a ‘log’, 1-1/2 to 2″ thick. Wrap each in plastic wrap in refrigerate until firm: 25 to 35 minutes. Cool on wire racks, then store in an airtight container. Makes 50 or so small cookies. Scroll Up ↑.

On 19 Dec, 2014. Odds are, if you visit me in late fall or winter, I’ll serve you fish pie. This is a recipe from Saveur. Magazine, dating back ten years or so. It is more of a casserole than a pie; like shepard’s pie, it is topped with mashed potatoes, dusted with cheese, then baked until the top is browned and the filling is warm and bubbly. It is excellent cold weather food. 1 small leek (white part only), chopped. 1 small onion, chopped. 1 2 rib celery, chopped. 3 large sprigs parsley, plus 1 tbsp.

James Beard’s Buttermilk White Bread. On 21 Dec, 2014. I’ve been working my way through. 1/2 cup warm (110-120 degree) water. 2 packages (2-1/2 tsp) active dry yeast. 4 cups bread (high-gluten) flour. 3 tbsp butter, melted and cooled. 1-1/2 cups buttermilk, room temperature. If baking in a loaf pan or baguette holder, remove the loaf from the pan and place it back in the oven for an additional 5 minutes to crisp up the bottom crust. Cool on a rack. Do you get tired of the typical dill, or garlic, or bread-and-butter pickles? 10 pickling cucumbers (roughly 7 cups) washed and sliced 1/8″ thick. 2 tbsp kosher salt (not iodized). 4 cups cider vinegar. 1 Tbsp whole allspice. 2 tsp white peppercorns. 6 1 pint canning jars, lids, and rings, washed. On 4 Oct, 2014. Cold weather means soup, right? I’d picked up Japanese Soul Cooking. From our local library, so I’ve been making a bunch of Japanese soba and udon soups. This one turned out particularly well. Dashi, fresh udon, duck, baby bok-choi, and leek all come together in the bowl. It is pretty quick to make, especially if you already have dashi made up. 1 3-4″ piece of Kombu. 1/2 cup bonito flakes. 2 tbsp mirin or sake. 1 lb fresh udon noodles. 4 baby bok choi, halved. 2 tbsp wasabi paste.
