By Jenn @ The Surrey Hills. This is my life saver after getting in from a long day at work and opening the fridge to realise I have next to no fresh veggies left! My Indonesian friend taught me a variation of it years ago when we lived together and I’ve relied on it ever since. Although I’m not vegetarian, I don’t eat all that much meat so I tend to throw in some tofu or quorn at this stage, with some freshly chopped chilli and coriander. Job done – dinner is ready! Vegetable Bean and Lentil Soup. 1 cup frozen mixed vegetables(corn, peas, carrots, green beans). 1 cup of kale. 1 can of black beans. 1 cup of dry navy beans. 1/2 cup of dry lentils. 4 cups veggie stock. 4 cups of cold water. 1 package onion soup mix (optional: you can choose to do 8 cups of veggie stock instead, I was just using what I had on hand).
