Black Beans

The Whole Family Kitchen. Mildly spicy, great for burritos! Add fresh corn and plenty of tomatoes in the summer. Cups dried black beans. Minced fresh cilantro to taste. Tsp light sesame oil. Salt, black pepper and cayenne pepper to taste. Remove any debris from beans, rinse thoroughly, and soak in lightly salted water for about 8 hours. Cook beans in vegetable stock until soft. While the beans are cooking, begin cooking onions in the sesame oil until just beginning to brown.

The base is traditionally made with kombu and bonito flakes, but we've never been content with the flavor of the bonito available to us. No matter; one can make delicious miso with plain vegetable stock — but if the flavors are too strong, the soup will suffer. 6-inch piece of kombu. Block of firm tofu, cut into small cubes. Heat to just shy of boiling.
