Tuesday, January 18, 2011. Some winters I'll go weeks without eating an actual salad. Without ripe tomatoes around, it's easy to become uninspired! But I do believe that a fresh-looking and tasting salad is still possible, even without much planning. The best part about this salad is that everything (including the lettuce) had been hanging around in my kitchen for over a week! I store the rest of the chickpeas in their canning liquid in a container in the fridge. Lettuce (bagged, of course).

Recipes to make in bulk at home and eat for several days. Meals you can make the night before in 5-10 minutes. 300 calories or less. Bring ingredients from home and easily prepare in an office kitchen. Things you - gasp! Actually have to cook (instead of just prepare). Foods that usually need refrigeration but don't need a microwave. Foods that store well in a drawer or communal fridge for meals on the fly. If you're lucky enough to have one in your office! No meat, but includes dairy or eggs.
