Wednesday, January 13, 2010. Christmas in West Virginia. After two glorious weeks of vacation, Greg and I made it back to Pullman, and back to work and school. We drove 42 hours (stopping only for gas and restrooms every 4 hours) back to West Virginia so that we could spend Christmas with our family and friends. We had a great trip, were blessed with easy traveling conditions (special thanks to all those praying we had good weather! Here are just a few pictures from our trip:. The whole gang in Ripley.

Monday, November 30, 2009. Dixie Loves The Beach. These pictures seemed to deserve their own post! Links to this post. Camping on the Olympic Peninsula. We stopped instead at Dosewallips State Park in Brinnon. It was fairly cold and misty at this campground right beside the Hood Canal. Monday, October 10, 2011. Scrunching her nose at Greg. :D. Dixie spent 95% of the weekend shivering. :( Sookie was in heaven and barely sat down. The (bundled up) Dolin family! My new camp meal.a fire-roasted quesadilla! I assembled quesadillas at home, wrapped them in foil, froze them and they worked out wonderfully on my high tech roasting stick. Greg fashioned a bench by the fire. It was put to good use. Ramen noodles. I'm not sure whose mouth is watering more! Ah, the perfect smore. Links to this post.

Life is Uncertain . . . Travel the World and Eat Dessert First! Tuesday, February 28, 2012. Tuesday dinner- Gado Gado. Ok, so I had lots of fresh veggies to use up and this is my new favorite dish! If you're not familiar with Gado Gado (I wasn't), it's an Indonesian dish that uses peanut butter and coconut milk. Depending on the ingredients you use, this dish can be made gluten free and is dairy free. 1/2 cup unprocessed peanut butter (I used Jif because that's what I had). 14 ounces canned coconut milk.

Tuesday, May 25, 2010. After a year and a half of hard work, Greg was able to breathe easy this week. On Friday, May 21st, he presented his research and conducted his defense immediately afterward. Saturday, September 26, 2009. This morning we went to WSU's Orchard to buy some freshly picked apples. WSU experiments with various kinds of apples, and throughout the season, they sell 80-some varieties of apples! Sunday afternoon, I made an apple pie using my gluten-free crust.
