I wondered why a Mac with a full 64Gb RAM was swapping even for simple surfing. I was seeing inexplicable beach-ball appearances. So did this:. Sudo launchctl unload -w /System/Library/LaunchDaemons/com.apple.dynamic pager.plist. Which switches the swap off and deletes the swap files. There is probably a down-side, but have yet to hit it.
