Tuesday, April 9, 2013. Marathon training- taper time. I am finding it hard to believe that the Eugene Marathon is a little less than three weeks away. My last recap detailed marathon training up to the halfway point, and I feel like a lot has happened since then! Here's what last week looked like:. Monday- 5.04 miles in Long Beach, since we were out of town for a few days. Tuesday- 5 miles at 9:00 pace. Wednesday- 3 mile walk. Thursday- 8:15 miles at 9:09 pace. Friday- 3 mile walk. Monday, January 28, 2013. This week, we came home from a weekend trip Monday and left again on Friday so I only planned a few meals last week. Both were soups, not surprisingly, and each made enough for leftovers. I am of the mindset that soup is even better the second day. Our menu last week:. I initially though this soup looked pretty bland, but we both loved it and it's full of healthy things like lentils, kale, and sweet potatoes. Plus, it makes a ton of leftovers. Tomato, Basil and Cheddar Soup.
