Rich, full, deep, almost buttery. Treat like olive oil in a salad dressing, especially a salad with bleu cheese and pears (pair with balsamic, red wine, sherry vinegars). Drizzle over pasta, mushrooms, roasted asparagus, roasted potatoes. Drizzle over goat cheese on a cheese platter. Pair with figs and prociutto - either wrapped and skewered, or wrapped and broiled. Drizzle with the walnut oil and honey. Sage and Wild Mushroom Olive Oil. Deep mushroom flavor, heavy herb flavor, a little goes a long way.
